In a deep fryer or large saucepan, heat the oil until it reaches a temperature of 190°C (375°F) on a cooking thermometer.
In a bowl, combine the flour for the batter with the cornstarch, baking powder and Cajun seasonings.
In another bowl, whisk the egg with the beer. Gradually add the dry ingredients until a smooth paste is obtained.
Add the breadcrumbs and stir.
Dry the pickles well on paper towels.
Place the flour (1/2cup) in a deep plate. Flour the gherkins, then coat with batter.
Fry the mini pickles for 2 minutes, turning them several times, until golden and crisp.
Pat dry on paper towels then serve.
